Wash and clean the beans, cook in salted water, drain and cool. Wash the endive and cut into thin slices. Wash and chop the cucumber. Peel, wash and cut the onion into rings. Wash the tomatoes and cut them in half.
Mix balsamic vinegar, 1 tablespoon water, lemon juice, coarse mustard, salt, and pepper, and toss with olive oil. Mix salad ingredients with dressing.
Rub turkey escalopes with cayenne and salt. Grind the chili pepper and cut into small rings. Heat the oil in a pan lined with chilies and sear the meat for 3-4 minutes on each side until golden brown. Arrange and serve with salad.
Before preparing the schnitzel, it is usually thinly sliced. This is meant to break down the muscle fibers to make the meat tender. However, this step was not necessary for a delicious Schnitzel salad with beans and chili. Why? Poultry, such as turkey, is always good and tender and easy to digest.
