Recipe “Two types of goat burgers with and without meat” | – Guide

Ingredients for the goat meat:

Place the leg of goat in a freezer bag. We wash the herbs, chop them finely and add them to the legs. Add garlic, chili pepper, sugar and spices. Put some olive oil in the bag. Seal the bag and marinate the meat in the refrigerator, preferably overnight.

Clean and chop the vegetables. Wash and pluck the parsley. Put everything in a roasting pan with a lid. Add the leg and the marinade from the bag to the pan as well. Add red wine until the legs are closed. Close the lid and bake in the oven heated to 140 degrees on top/bottom heat for about 4 hours until the meat comes off the bone well. Shred with two forks. Strain the boiling water, collect it in a pot and boil it. Add minced meat to the broth. Season to taste with salt, pepper and cumin.

Ingredients for Mango Pineapple Chutney:


Peel the garlic and cut into small cubes. Fry in oil in a small bowl. Orange and lime should be washed in hot water and dried. Peel the orange and set aside. Then cut the orange in half and squeeze. Zest the lime.

Cut the chili pepper and garlic into small cubes or strips and add to the pot along with the sugar. Peel the mango and pineapple and cut into small pieces. Also in a pot, deglaze with white wine and orange juice. simmer for about 10 minutes until the fruit is nice and soft. Then add orange and lime zest and season the chutney with salt and pepper. Season with a little cayenne pepper, if desired.

Ingredients for the burger:


Cut the burger buns open and toast briefly, cut side down, in a greased skillet until crisp.

Wash, dry, and finely chop the fresh herbs, mix with fleur de sel, and place in a shallow bowl. Cut the goat’s ricotta mozzarella into 1 cm thick pieces, pour a little oil in a covered pan and fry until crispy on both sides. Then spread the still hot cheese over the herb and salt mixture.

Finely chop white cabbage and red cabbage. Wash and chop cucumbers and tomatoes.

Then assemble the hamburgers. Place 1 dollop of tzatziki on the bottom half of each. For a vegetarian version, top with lettuce, cucumber and tomato as desired. Place the grilled cheese on top of the vegetables and top with 1 dollop of mango-pineapple chutney and some shredded red cabbage.

For the version with meat, add some shredded white cabbage to the tzatziki. Top with cucumber and tomato slices, followed by goat meat and 1 dollop of mango pineapple chutney. Finally, add the finely chopped red cabbage and cover the top of the bun.

Of course, you can do both. You can top your burger with grilled cheese and goat meat if you like.

Ingredients for cucumber salad:


Wash, dry and chop the cucumber. Wash the dill, dry it, tear off the leaves and chop it finely. In a bowl, mix the cream and both. Add salt and pepper to taste and let it soak for several hours. Enough for a burger.
