Ingredients for Mutton Cutlets:
Clean the lamb pieces and mince the garlic cloves. Heat olive oil and pure butter in a pan and fry the cutlets on both sides. Add the herbs and minced garlic cloves to the pan. Reduce the heat and finish cooking the cutlets. Sprinkle with salt and pepper. Cutlets take only a few minutes. They should still be pink and juicy at the core.
Ingredients for the salad:
Lettuce should be thoroughly washed and dried. Also peel and cut vegetables and fruits into slices or pieces. Heat olive oil in a pan. Add the carrots, onion and rhubarb and sauté over medium heat for 2 to 3 minutes, until translucent. Add salt and sugar and leave to cool.
Roughly chop parsley and dill. Put all the prepared ingredients in a bowl and mix gently.
Ingredients for the vinaigrette:
Mix well the ingredients for the vinaigrette and add to the salad just before serving.
Arrange meatballs on plates with roasted garlic cloves and lettuce.
