Lightning fast fruit salads are perfect for warm summer days

Summer temperatures in Germany reach 40 degrees. The days are getting so hot that heavy meals are very heavy. Grilling? Is it generating more heat in the heat? Better not. Fruit salads are so much easier to digest and best of all delicious and refreshing, they are best taken out of the fridge.

We have put together four new fruit salads for you, just as they were prepared in the GDR. So without kiwis, nectarines, guavas, carambola and passion fruit. No, it was said then. Therefore, these exotic fruits from the south are not even in our recipes. However, as in the GDR, fruit salad was often made with a bit of alcohol for a twist.

Recipe No. 1: Melon melon – served in a melon

Ingredients: small melon, 200 grams of sweet and sour apples, 2 tablespoons of sultanas, 4 tablespoons of brown rum, 1 glass of sparkling wine, 2 tablespoons of freshly squeezed lemon juice and 2 tablespoons of sugar.

Put up: First, soak the sultanas in rum. Then cut the melon flat from the top. Remove the flesh and seeds and cut into cubes. Peel, core and finely chop the apples. Now mix the fruit cubes with the sultanas, cold sparkling wine, lemon juice and sugar, then fill the fruit salad inside the hollowed melon. Refrigerate for at least an hour, then serve chilled.

Recipe #2: Colorful fruit salad with quark

Ingredients: 600 grams of fruit (peaches, oranges, apricots, apples, pears, bananas), 1 tablespoon of strawberry liqueur, 100 grams of low-fat cottage cheese, 2 tablespoons of sour cream, 2 tablespoons of freshly squeezed lemon juice, sugar.

Put up: Chop the fruit, cut into cubes or slices, and drizzle with strawberry liqueur (optionally cherry liqueur). For the topping, whisk together the quark, cream, lemon juice and 1-2 tablespoons of sugar to taste, then stir in the fruit. Cool and let stand.

Recipe #3: Grape salad

Ingredients: 250 grams of green grapes, 250 grams of red grapes, 125 grams of Gouda cheese, 125 grams of cooked ham, 1 pear, 3 tablespoons of mayonnaise, 125 ml of yogurt, 2 tablespoons of freshly squeezed lemon juice, salt and ten finely chopped almonds.

Put up: Halve the grapes, slice the Gouda, the baked ham and the pear. Mix together the mayo, yoghurt and lemon juice, season with salt and pepper, then top with the fruit, cheese and ham, stir and garnish with slivered almonds.

Recipe #4: Refreshing Spicy Peach Salad

Ingredients: 1 kg of sweet, juicy peaches, 150 g of sour cherries, 2 tablespoons of freshly squeezed lemon juice, 125 ml of whipped cream, 4 cl of brown rum, 2-3 tablespoons of brown sugar.

Put up: Peaches, peel, stone and cut in half. Here you can certainly deviate from the GDR recipe. Nectarine is easy to work with, no need to peel it. Then the fruits are mixed with rum, sugar and lemon juice. Finally, fold in the chopped sour cherries and sour cream. Chill in the refrigerator.
