Scrub the dragon fruit with a vegetable peeler. Thinly slice the top and bottom. Use a sharp knife on the inside of the skin to remove the fruit. Cut the rough skin and wash under hot water.
Boil water in a pot. Add the sugar and peels to the water and boil for 10-15 minutes until the water turns a nice red color. Now remove the peel and add lemon juice.
In the meantime, cut the meat into 2 cm cubes and put them in a mold.
Mix the agar agar with the water according to the instructions. Test the jelly and pour the mixture into a mold to cool. Leave the mixture to cool until firm. Then slice or just slice as desired.
